Mango Pancakes are a tasty and tropical take on the traditional pancake. The sweetness of mango mixes perfectly with the fluffiness of pancakes, making for the ideal breakfast or brunch. Here’s an easy recipe for mango pancakes:

Ingredients of Mango Pancakes:

For Pancakes:

  • All-purpose flour – 1 cup
  • Baking powder – 2 teaspoons
  • Sugar – 2 tablespoons (optional, or adjust to taste)
  • Salt – 1/4 teaspoon
  • Milk – 3/4 cup (can use almond or coconut milk for a dairy-free version)
  • Egg – 1
  • Ingredients: 1 egg, 1/2 cup mango puree (fresh or canned).
  • Melted butter – 2 tablespoons (or vegetable oil)
  • Vanilla extract – 1 teaspoon

For Mango Sauce (optional topping):

  • Ripe mango – 1, peeled and cut
  • Sugar: 1-2 tablespoons (optional, depending on the sweetness of the mango).
  • Lime juice – 1 teaspoon (optional)
  • Mint leaves for garnish (optional)

Instructions of Mango Pancakes:

1. Prepare the Mango Puree:

  • If you are using fresh mango, peel and cut it before blending it into a smooth puree with a blender or food processor.
  • Reserve the purée for the pancakes and sauce.

2. Make the Pancake Batter:

  • In a large mixing bowl, combine the dry ingredients, including flour, baking powder, sugar, and salt.
  • In a separate mixing dish, combine the egg, milk, mango puree, melted butter, and vanilla essence. Mix well.
  • Combine the wet and dry ingredients, stirring until well blended. The batter should be thick, yet pourable. If it’s too thick, add a little more milk to achieve the right consistency.

3. Cook the Pancakes:

  • Heat a nonstick skillet or griddle over medium heat, then lightly coat it with butter or oil.
  • Pour approximately 1/4 cup batter into the skillet for each pancake. Cook until bubbles appear on the surface (approximately 2-3 minutes), then turn the pancake and cook for another 2 minutes, or until golden brown and fully done.
  • Repeat with the remaining batter, coating the skillet as necessary.

4. Prepare the Mango Sauce (Optional):

  • In a small saucepan, combine the chopped mango, water, and sugar (optional). Cook for about 5-7 minutes over medium heat, stirring regularly, until the mango softens and becomes syrupy.
  • Using a spoon or a blender, mash or puree the sauce to your desired consistency.
  • To improve the flavor, squeeze in some lime juice.

5. Serve:

  • Stack the pancakes on a dish and cover with mango sauce.
  • Garnish with fresh mint leaves or additional mango slices if preferred.

Optional Toppings:

whipped cream or vanilla ice cream.
Chopped nuts (almonds, cashews)
Sprinkle with cinnamon or coconut flakes.
