Kheer Recipe

- 4 cups of full-fat milk
- 1/4 cup sugar (adjust to taste)
- 1/4 teaspoon powdered cardamom
- 1-2 tablespoons of chopped nuts, such as pistachios, almonds, or cashews
- 1 tablespoons of raisins (kismis) is optional
- Pinch of saffron strands (kesar) is optional
- 1-2 tbsp rose water or kewra water (optional, for fragrance)

1. Prepare the Rice:
First, thoroughly wash the rice in cold water to remove any extra starch. After washing, drain the rice and set aside.
2. Cook the Rice:
Next, bring the milk to a boil in a heavy-bottomed pan set over medium heat. Once the milk begins to boil, turn the heat down to low. Now, add the washed rice to the boiling milk, stirring occasionally to keep it from sticking to the bottom of the pan. Allow the rice to cook in the milk, stirring constantly, until soft and the milk thickens. This should take approximately 25-30 minutes.
3. Add Sugar and Spices:
Once the rice is cooked and the milk has thickened, add the sugar and cardamom powder. Stir well until the sugar is completely dissolved. At this point, you can add saffron threads to improve the flavor and color of the kheer. Cook for another 5-10 minutes over low heat, allowing the flavors to combine.
4. Add Nuts and Dry Fruits:
In the meantime, warm up a small amount of clarified butter, or ghee, in a different small pan. The chopped nuts and raisins should be lightly roasted for approximately one minute, or until golden brown. When finished, mix the dry fruits and these roasted nuts into the kheer with a lightly move.
5. Finish the Kheer:
Lastly, for a fragrance touch, add a few drops of kewra or rose water if you feel like it. To incorporate the smell, continue to heat for one extra minute after giving it a good stir.
Serve:
