Instructions:
Step 1: Prepare the Bhaji
- Starting by heating the butter in a large pan over medium heat.
- Once the butter has melted, add the finely chopped onions. Sauté until they are golden brown. Next, add the ginger-garlic paste and cook for another 1-2 minutes, until fragrant.
- Next, add the chopped bell pepper and cook for 2-3 minutes. Next, add the chopped tomatoes and cook for about 5 minutes, or until they soften.
- Add the peas and mashed potatoes to the pan, then the finely chopped cauliflower (if using). Stir everything up until thoroughly blended.
- Finally, add the Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mix thoroughly and heat for an additional 5 minutes.
- Next, add a sufficient amount of water to produce the desired consistency and let it boil for 10-15 minutes. Stir occasionally to keep it from following to the pan.
- Once done, mash the bhaji with a potato masher to achieve a smooth, thick consistency. Finally, finish with a squeeze of lemon juice and chopped cilantro.
