Ingredients of Pav Bhaji Recipe:

For the Bhaji (vegetable curry):

    • 2 tablespoons butter
    • 1 onion, finely chopped
    • 1 green bell pepper, finely chopped
    • 1 tomato, finely chopped
    • Additionally 1/2 cup peas (fresh or frozen)
    • 2 medium potatoes, boiled and mashed
    • 1/2 cup finely chopped cauliflower (optional).
    • 1 tablespoon of ginger-garlic paste
    • 2 teaspoons of Pav Bhaji masala
    • 1/2 teaspoon of red chili powder
    • 1/2 teaspoon of turmeric powder
    • Add Salt to taste
    • 1/2 cup water (or more depending on the desired consistency)
    • Additionally Lemon wedges, chopped cilantro, and butter (as garnish)
  • For the Pav (bread):

    • 8 Pav buns (bread rolls)
    • 2 tablespoons butter
    • 1 teaspoon Pav Bhaji masala (optional)

Instructions:

Step 1: Prepare the Bhaji
  1. Starting by heating the butter in a large pan over medium heat.
  2. Once the butter has melted, add the finely chopped onions. Sauté until they are golden brown. Next, add the ginger-garlic paste and cook for another 1-2 minutes, until fragrant.
  3. Next, add the chopped bell pepper and cook for 2-3 minutes. Next, add the chopped tomatoes and cook for about 5 minutes, or until they soften.
  4. Add the peas and mashed potatoes to the pan, then the finely chopped cauliflower (if using). Stir everything up until thoroughly blended.
  5. Finally, add the Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mix thoroughly and heat for an additional 5 minutes.
  6. Next, add a sufficient amount of water to produce the desired consistency and let it boil for 10-15 minutes. Stir occasionally to keep it from following to the pan.
  7. Once done, mash the bhaji with a potato masher to achieve a smooth, thick consistency. Finally, finish with a squeeze of lemon juice and chopped cilantro.
Step 2: Toast the Pav
  1. While the bhaji cooks, melt some butter in a separate saucepan over medium heat.
  2. Once the butter has melted, slice the Pav buns horizontally and set them on the pan. Toast them till brown and crispy on both sides. If desired, sprinkle a pinch of Pav Bhaji masala on top of the buns while toasting for more flavor.
Serve:

Pav with mix veg

  1. Serve the Pav Bhaji hot on a dish, with the toasted Pav on the side.
