Here’s a simple and delicious Kheer recipe with, a traditional Indian rice pudding made with milk, Sugar and aromatic spices.

Ingredients of Kheer Recipe:

  • 1/4 cup rice (preferably basmati)
  • 4 cups full-fat milk
  • 1/4 cup sugar (adjust to taste)
  • 1/4 tsp cardamom powder
  • 1-2 tbsp chopped nuts (cashews, almonds, pistachios, etc.)
  • 1 tbsp raisins (optional)
  • A pinch of saffron strands (optional)
  • 1-2 tbsp rose water or kewra water (optional, for fragrance)

Instructions:

1. Prepare the Rice:

First, wash the rice thoroughly under cold water to remove excess starch. Once washed, drain the rice and set it aside.

2. Cook the Rice:

Next, bring the milk to a boil in a heavy-bottomed pan over medium heat. Once the milk begins to boil, reduce the heat to low. Now, add the washed rice to the boiling milk, stirring occasionally to prevent the rice from sticking to the bottom of the pan. Allow the rice to cook in the milk, stirring frequently, until it becomes soft and the milk thickens. This should take about 25-30 minutes.

3. Add Sugar and Spices:

After the rice has cooked and the milk has thickened, it’s time to add the sugar and cardamom powder. Stir well until the sugar is fully dissolved. At this stage, you can also add saffron strands if you like, to enhance the flavor and color of the kheer. Continue cooking on low heat for another 5-10 minutes, allowing the flavors to meld together.

4. Add Nuts and Dry Fruits:

Meanwhile, heat a little ghee (clarified butter) in a separate small pan. Lightly roast the chopped nuts and raisins for about a minute until they turn golden brown. Once done, add these roasted nuts and dry fruits to the kheer, stirring gently to combine.

5. Finish the Kheer:

Finally, if desired, add a few drops of rose or kewra water for a fragrant touch. Stir well and cook for another minute to incorporate the aroma.

Serve:

Once the kheer is ready, remove it from the heat and let it cool slightly. You can serve the kheer warm or chilled, depending on your preference.
