Here’s a simple and delicious recipe for Tomato Soup Recipe!

 

Ingredients:

  • 6 ripe, chopped tomatoes
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups vegetable or chicken broth
  • 1 tablespoon of olive oil or butter
  • 1 teaspoon sugar (optional for balancing acidity)
  • Add Salt and pepper for taste
  • ½ teaspoon dried basil or oregano (optional)
  • Fresh basil leaves for garnish (optional)
  • Cream or milk for garnish (optional)

Instructions:

  1. Saute Aromatics: Heat olive oil or butter in a pot over medium heat. Add the chopped onions and saute until transparent. Add the minced garlic and heat for another minute.
  2. Cook Tomatoes: Add the chopped tomatoes to the pot. Cook for 5-7 minutes, until they start to soften.
  3. Add Broth: Pour the vegetable or chicken broth. If using, season with sugar, salt, pepper, and dried herbs. Bring to a boil, then decrease heat and allow it simmer for 15-20 minutes.
  4. Blend: Remove from heat and allow to cool slightly. Using an immersion blender, purée the soup until smooth. If you don’t have an immersion blender, carefully pour the soup into a normal blender in batches.
  5. Adjust Seasoning: Adjust the seasoning: Taste the soup and make any necessary adjustments. To balance the flavors, add extra salt, pepper, or sugar.
  6. Serve: The soup into individual bowls. Garnish with fresh basil leaves and a drizzle of cream or milk, if desired.
