Stuffed Capsicum (Bell Pepper) Recipe

Ingredients:

  • 4 large Coloured capsicums (bell peppers of any color)
  • 1 cup cooked rice (you can use white, brown, or quinoa)
  • 1/2 cup of cooked chickpeas or beans (optional)
  • 1 medium chopped onion
  • 2 garlic cloves, minced
  • 1 medium chopped tomato
  • 1 cup grated cheese (cheddar, mozzarella, or a combination)
  • 1 tablespoon of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of dried oregano (optional)
  • Add Salt and pepper to taste

Instructions:

  1. Prepare the Capsicums: 
    • Preheat the oven to 180°C (350°F).
    • Cut off the tops of the capsicums and remove the seeds and membranes inside.
    • Put the capsicums in a baking dish.
  2. Prepare the Stuffing:

    • In a large pan, heat the olive oil over medium heat. Cook for 3-4 minutes, stirring in the chopped onion and garlic until soft and golden.
    • Cook the chopped tomatoes for another 2-3 minutes, or until they soften.
    • Add in the cooked rice, beans or chickpeas (if using), cumin, paprika, and oregano. Mix well.
    • Season with salt and pepper to taste.
    • Remove from heat and add in half of the grated cheese then Capsicum filling are ready.
  3. Filled Capsicums:

  4. Bake:
