    • 1/4 cup cashew nuts
    • 1/4 cup of melon seeds (optional)
    • 1/4 cup of poppy seeds (optional)
    • 1/4 cup cream (Cream for shahi Paneer)
    • 1/4 teaspoon of turmeric powder
    • 1 teaspoon of red chili powder
    • 1/2 teaspoon of garam masala
    • 1/2 teaspoon of coriander powder
    • 1/4 teaspoon of cardamom powder (green)
    • 1 teaspoon of sugar (optional)
    • Add Salt to taste
    • 1/2 cup of milk
    • 200 grams of cubed paneer, or as you like
  • For Garnish:

    • Chopped fresh coriander leaves
    • A few optional slivers of pistachios or almonds
    • 1 spoonful of dripping cream (Shahi Paneer Cream)

  1. Prepare the Cashew Paste:
    • For 10-15 minutes, soak the cashew nuts, melon seeds, and poppy seeds in warm water.
    • If needed, add a small amount of milk or water and grind them into a smooth paste. Put aside.
  2. Cook the Gravy:
    • Heat the oil or ghee in a pan over medium heat.
    • Fry the chopped onions until they are golden brown.
    • Fry the garlic and diced ginger for a further 1-2 minutes, or until fragrant.
    • Cook the chopped tomatoes for 3-4 minutes, or until they are completely soft and have mixed into the mixture.
  3. Add Spices:
    • Add salt, turmeric, coriander powder, and red chili powder and stir. Mix properly and cook for 2 more minutes.
    • Add the cashew-melon seed paste in the pan and cook in low-medium heat for 5 to 7 minutes, stirring continuously. The paste should release oil and get spicy.

    • Bring the gravy to a gentle simmer after adding the milk. If it’s too thick, thin it out by adding extra water or milk.
    • Add the cardamom powder and garam masala when the gravy is thick and creamy. Mix thoroughly.

    • Cook for 3–4 minutes on low heat with a lid on. To give the paneer more time to absorb the flavors, you might boil it for a little longer.
