Masala Dosa Recipe
Here’s a delicious recipe for making Masala Dosa Recipe, a popular South Indian dish.
Ingredients
 For the Dosa Batter:
1 cup rice (in a ideal parboiled or short-grain rice)
1/3 cup divided urad dal (black gram)
1/4 teaspoon fenugreek seeds (optional)
Add Salt to taste
Water as needed
Oil or ghee for cooking
 For the Potato Filling:
2 medium potatoes, boiled and mashed
1 medium onion, finely chopped
1-2 green chilies, finely chopped
1 teaspoon of mustard seeds
1 teaspoon of cumin seeds
1/2 teaspoon of turmeric powder
Fresh coriander, chopped (optional)
Add Salt to taste
2 tablespoons of oil
Instructions
Prepare the Dosa Batter:
1. Soak the ingredients: Rinse the rice, urad dal, and fenugreek seeds in water. Soak them individually for 4-6 hours, or overnight.
2. Grind the Batter: Drain the soaked ingredients and combine them in a blender or wet grinder, adding water as needed to get a smooth batter. The consistency should be like pancake batter.
3. Ferment: Transfer the batter to a large bowl, cover, and leave to ferment in a warm location for 8-12 hours, or until doubled in volume. After fermentation, taste and add salt as needed.
Prepare the Potato Filling:
1. Cooking the Spices: Heat oil in a pan. Add the mustard seeds and let them sputter. Then, combine the cumin seeds, chopped onions, and green chilies. Saute the onions until they become transparent.
2. Add Potatoes and Spices: Combine the mashed potatoes, turmeric powder, and salt. Mix thoroughly and heat for a few minutes. If using, season with fresh coriander. Set aside.
Make the Dosas:
1. Heat the Pan: Place a nonstick skillet or cast-iron tawa over medium heat. Lightly coat it with oil or ghee.
2. Spread the Batter: Add a ladleful of dosa batter to the center of the pan. Quickly spread it in a circular motion to create a thin pancake.
3. Cook: Drizzle some oil or ghee over the edges. Cook until the dosa is golden brown and crispy, about 2-3 minutes. If desired, add the potato filling to the center at this point.
4. Fold and Serve: Fold the dosa over the filling, then serve hot. Repeat with the remaining batter.
