Here’s an easy recipe for Kaju Katli (Cashew Katli), a popular cashew-based Indian dessert. This creamy dessert, known as Kaju Katli Recipe, is popular at festivals and special events because to its delicate texture and sweet, nutty flavor.

 Ingredients

Kaju Katli Ingredients:

Cashews (Kaju): 1 cup
¾ cup of sugar
½ cup of water
1 tablespoon ghee (clarified butter).
¼ teaspoon Cardamom powder (optional)
Silver leaf (Vark): for garnishing (optional)

Instructions

1. Soak Cashews: Soak the cashews in water for approximately 4-5 hours, or overnight. Drain and pat dry.

2. Make Cashew Powder: In a blender, crush the cashews to a fine powder. Make sure not to over-grind, otherwise it will turn into cashew butter.

3. Prepare Sugar Syrup:In a pan, combine the sugar and water. Heat over medium heat until the sugar totally melts. Boil until the syrup has a one-string consistency (a drop between your fingertips creates a single thread).

4. Mix Cashew Powder: Reduce the heat and gradually add the cashew powder to the sugar syrup, stirring constantly. If using, mix in ghee and cardamom powder.

5. Cook Mixture: Keep mixing until the mixture begins to separate from the sides of the pan and forms a dough. This normally takes 5–7 minutes.

6. Shape the Katli: Transfer the dough to a greased surface or parchment paper. Allow to cool somewhat before rolling out into a thin layer (approximately ¼ inch thick) with a rolling pin.

7. Cut into Pieces: When the Cashew Barfi has cooled, cut the rolled dough into diamond or square shapes with a sharp knife.

8. Garnish: If desired, add a silver leaf on top of each piece of Cashew Nut Barfi for decoration.

9. Store: Allow Kaju ki barfi to completely cool before storing in an airtight container. So, the Cashew Barfi (Barfi Kaju) recipe is complete.
