This is a tasty recipe for veggie Biryani. Biryani is a wonderful and aromatic rice meal cooked using basmati rice and veggies. First, cook the rice separately using fragrant spices such as saffron, cinnamon, and cardamom. Meanwhile, marinade the vegetables in a mixture of yogurt and spices before cooking them till soft. Next, layer the cooked rice and vegetables to make a rich and tasty dish. Finally, garnish with fried onions, boiled eggs, and fresh herbs. For the perfect holiday supper, serve the Biryani with refreshing side dishes such as raita or salad.

Ingredients of Biryani Recipe:

 For the Vegetable Marinade:

2 cups chopped mixed veggies (such as carrots, peas, potatoes, and beans)
1 cup yogurt
2-3 green chilis, slit
1 tablespoon of ginger-garlic paste.
1 teaspoon of red chili powder.
1 teaspoon of turmeric powder.
1 teaspoon of garam masala.
Added salt to taste.
Additionally 2 teaspoons of lemon juice.
Additionally Fresh cilantro and mint leaves, chopped

For the Rice:

2 cups basmati rice
4 cups of water
2-3 green cardamom pods
4-5 cloves
1-2 bay leaves
1 stick cinnamon
Added Salt according to taste

 For Assembly:

2 tablespoons of ghee or oil
Additionally Saffron strands (optional)
Finally Fried onions (for garnish)

 Instructions

Step 1: Marinate the Vegetables
  1. First, in a bowl, combine the yogurt, green chilies, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, lemon juice, cilantro, and mint.
  2. Next, add the mixed vegetables to the bowl and thoroughly coat them with the marinade. Let the vegetables marinade for at least 30 minutes. Once marinated, the vegetables are ready to be used in the biryani.
Step 2: Cook the Rice
  1. Begin by washing the basmati rice in cold water until clear. Finally, soak the rice in water for 30 minutes before draining it.
  2. Meanwhile, heat 4 cups of water in a big pot until it boils. Add the cardamom, cloves, bay leaves, cinnamon, and salt to the boiling water.
  3. Once the water has been spiced with the spices, add the soaked rice and simmer until around 70% done. Finally, strain the rice and keep it away for the following step.

Step 3: Cook the Vegetables
  1. First, in a big pot, heat the ghee or oil over medium heat. Then, add the marinated vegetables and cook until soft, which should take about 10-15 minutes.
Step 4: Layer the Biryani
  1. After the vegetables have been cooked, stack the partially cooked rice on top in the same saucepan.
  2. Next, drizzle saffron water (if using) over the rice, then top with garam spice and fried onions.
Step 5: Dum Cooking (Final Steaming)


1. Next, cover the pot carefully. Optionally, seal it with dough to catch the steam.
2. Cook on low heat for 25-30 minutes for the flavors to combine.

 Step 6: Serve
  1. First, fluff the biryani with a fork before serving. Garnish with more fried onions, cilantro, and mint for added flavor.
  2. Next, serve the biryani hot, with raita (yogurt sauce) and a fresh salad on the side.
