Instructions:
- Prep the Okra:
- Wash and dry the okra thoroughly. This is an important step because any moisture will cause the okra to become slimy while cooking.
- Cut the tops off each okra and slice them into 1-inch pieces (you can cut them into rounds or diagonally, depending on your preference).
- Cook the Okra:
- Heat a non-stick pan over medium heat with 1 tablespoon of oil. Add the sliced okra and stir-fry them for about 10-15 minutes, stirring now and then. Cooking the okra until it is soft and has a hint of color is the lightly browned. Keep it slightly crisp since you don’t want it to get too soft. Put aside the okra.
- Make the Masala:

- Combine Okra with Masala:
- Add the cooked okra into the masala. Make sure the spices are evenly distributed over the okra by gently combining all the ingredients.
- Sprinkle the garam masala and stir again. Let everything cook together for another 5 minutes, allowing the flavors to blend.
- Garnish & Serve:
- Garnish the Bhindi Fry with freshly chopped coriander leaves.

Tips:
