A traditional Indian meal called Baingan Bharta is made with roasted and mashed brinjal (baingan) that has been cooked with vegetables and spices. Here is a basic formula for you to follow:

Ingredients of Baingan Bharta:

  • 2 brinjal (baingan) of medium size
  • 1 medium onion, cut finely
  • 1 tomato, Cut finely
  • 2-3 chopped green chilies (adjust to taste)
  • 1-inch of finely chopped or grated ginger
  • 2-3 minced garlic cloves
  • 1 teaspoon of cumin seeds
  • 1/2 teaspoon of powdered turmeric
  • 1 teaspoon of red chili powder
  • 1 teaspoon of garam masala
  • 1 teaspoon of coriander powder
  • Add Salt to taste
  • For garnish, chop some fresh cilantro (coriander leaves).
  • 2 tablespoons oil, either mustard or vegetable.
  • 1 tablespoon of lemon juice (optional)

Instructions:

Baingan bharta step by step

  1. Roast the Brinjal (Baingan):

    • After washing, pat the brinjal dry. Make a few holes with a fork for brinjal bharta recipe.
    • Roast the brinjal in the oven or immediately over an open flame on a gas range. If applying the flame method, put the brinjal straight on the burner and roast it over medium heat, rolling it every so often until the brinjal is soft and the skin is browned. It should take 15-20 minutes.
    • Preheat the oven to 400°F (200°C) if you want to use it. Roast the brinjal for 30-40 minutes, turning them halfway through, until they are soft and browned.
    • After roasting, allow the brinjal to cool slightly before removing the skin and using a fork to mash the flesh. Put it away.
  2. Prepare the Masala:

    • In a pan, heat the oil over medium heat.
    • Let the cumin seeds burn after adding them.
    • Saute the chopped onions until they turn golden brown.
    • Add the green chilies, ginger, and garlic. Saute until smelly, 2-3 minute.
    • Cook the diced tomatoes until they become mushy and form a paste.
    • Add the salt, turmeric, coriander powder, and red chili powder. For 3-4 minutes, cook the masala, stirring now and then.
  3. Combine the Roasted Brinjal with the Masala:

    • Mash the roasted brinjal and add it to the pan with the masala.
    • After fully mixing, simmer the mixture on low heat for an additional five to six minutes to allow the flavors to combine.
    • If necessary, adjust the seasoning; for added taste, you can add a pinch of garam masala in Baingan ka Bharta.
  4. Garnish and Serve:

    • Add some freshly coriander leaves (Dhaniya) in Baingan bharta recipe and optional lemon juice as garnish.
    • Serve hot Brinjal Bharta over steaming rice, roti, or naan.
