Ingredients:

  • Carrots – 4 to 5 large, peeled and grated (about 4 cups)
  • Full-fat milk – 2 cups
  • Sugar – 1/2 to 3/4 cup (adjust to taste)
  • Ghee (Clarified butter) – 3 tablespoons
  • Cardamom powder – 1/2 teaspoon (optional)
  • Chopped nuts (Cashews, almonds, and pistachios) – 2 tablespoons (optional)
  • Raisins – 1 tablespoon (optional)

Instructions of Gajar Ka Halwa:

  1. Prepare the Carrots:
    • Wash, peel, and grate the carrots using a box grater or food processor.
  2. Cook the Carrots:
    • Heat a non-stick pan or heavy-bottomed pan over medium heat. Add 2 tablespoons of ghee.
    • Once the ghee is hot, add the grated carrots and sauté for 5-7 minutes. Stir occasionally, so the carrots soften and the raw smell fades.
  3. Add Milk:
    • Pour in the milk and stir the mixture. Let the milk come to a boil, then lower the heat and simmer.
    • Cook the mixture, stirring occasionally, until the milk is completely absorbed by the carrots. This may take around 15-20 minutes. The mixture should be dry, and the carrots should be soft.
  4. Sweeten and Flavor:
    • Once the milk is absorbed, add sugar and cardamom powder (optional). Mix well.
    • Let the halwa simmer for another 5-10 minutes until the sugar dissolves, and the mixture thickens. Stir frequently to avoid burning.

  5. Add Ghee and Nuts:
    • Add the remaining 1 tablespoon of ghee. Mix it well to give the halwa a rich, creamy texture.
    • You can also add nuts and raisins at this stage. Stir well to incorporate them.
  6. Serve:
    • Cook for another 2-3 minutes to allow the flavors to meld together. Once done, remove from heat.
    • Serve hot or warm, garnished with extra nuts if desired.
