Here’s a simple recipe for making Vegetable Manchurian recipe, a popular Indo-Chinese dish. First, you prepare the fritters by mixing vegetables or meat with cornflour and seasonings. Next, deep-fry the fritters until crispy and golden brown. Meanwhile, in a separate pan, sauté garlic, ginger, onions, and green chilies. Then, add soy sauce, ketchup, and chili sauce, along with vegetable broth or water to create a flavorful sauce. Ingredients of Manchurian Recipe
For the Manchurian Balls:
(Dry Manchurian and Dry Veg Manchurian)
1 cup mixed vegetables (carrot, cabbage, capsicum, beans), finely chopped
1/2 cup boiled and mashed potatoes
2-3 tablespoons cornflour (or cornstarch)
1 tablespoon all-purpose flour (optional)
1-2 green chilies, finely chopped
1 teaspoon ginger-garlic paste
Salt to taste
Manchurian Masala
Oil for frying
For the Manchurian Sauce:
Firstly, 2 tablespoons oil
1 tablespoon ginger-garlic paste
1-2 green chilies, slit, Gobi chilli
1 small onion, finely chopped
1 tablespoon soy sauce
1 tablespoon tomato ketchup
1 tablespoon chili sauce (adjust to taste)
1/2 cup vegetable broth or water
1 teaspoon vinegar
1-2 teaspoons cornflour mixed with water (for thickening)
Salt and pepper to taste
Chopped spring onions for garnish
Instructions of Manchurian Recipe
1. Prepare the Manchurian Balls:
In a mixing bowl, combine the chopped vegetables, mashed potatoes, cornflour, all-purpose flour (if using), green chilies, ginger-garlic paste, Gobi chilli and salt.
Mix well until it forms a dough-like consistency. If the mixture is too wet, add a bit more cornflour.
Next, Shape the mixture into small balls.

2. Fry the Manchurian Balls:
Once heat oil in a pan over medium heat.
Next, fry the balls until they are golden brown and crispy. Then, remove and drain on paper towels.
3. Prepare the Sauce:
In a separate pan, heat oil. Then, add ginger-garlic paste and green chilies; sauté for a minute.
Next, add chopped onions and sauté until translucent.
Afterward, Stir in soy sauce, tomato ketchup, chili sauce, and vinegar. Mix well.
Then, add vegetable broth or water and bring to a simmer.
If you want a thicker sauce, stir in the cornflour-water mixture and cook for a few minutes until the sauce thickens.
Finally, Season with salt and pepper to taste.
4. Combine:
Add the fried Manchurian balls to the sauce and gently mix to coat them.
Cook for another 2-3 minutes to allow the flavors to meld.
5. Serve:
Garnish with chopped spring onions and serve hot with fried rice or noodles.
