Here’s a simple recipe for making Kaju Katli Recipe(Cashew Katli recipe), a popular Indian sweet made from cashews. This Kaju Katli Recipe, creamy treat is loved for its delicate texture and sweet, nutty flavor, making it a favorite during festivals and special occasions.

 Ingredients

Kaju Katli Ingredients:

Cashews (Kaju): 1 cup
Sugar: ¾ cup
Water: ½ cup
Ghee (Clarified butter): 1 tablespoon
Cardamom powder: ¼ teaspoon (optional)
Silver leaf (Vark): for garnishing (optional)

Instructions 

(Kaju Katli Preparation)

1. Soak Cashews: Soak the cashews in water for about 4-5 hours or overnight. Drain and pat dry.

2. Make Cashew Powder: In a blender, grind the cashews into a fine powder. Be careful not to over-grind, or it will turn into cashew butter.

3. Prepare Sugar Syrup: In a pan, combine sugar and water. Heat on medium flame until the sugar dissolves completely. Boil until it reaches a one-string consistency (when a drop of syrup between your fingers forms a single thread).

4. Mix Cashew Powder: Reduce the heat and add the cashew powder to the sugar syrup, stirring continuously. Add ghee and cardamom powder if using.

5. Cook Mixture: Keep stirring until the mixture starts to leave the sides of the pan and forms a dough. This usually takes about 5-7 minutes.

6. Shape the Katli: Transfer the dough onto a greased surface or parchment paper. Allow it to cool slightly, then roll it out into a thin layer (about ¼ inch thick) using a rolling pin.

7. Cut into Pieces: Once cool, then the Cashew Barfi cut the rolled dough into diamond or square shapes using a sharp knife.

8. Garnish: If using, place silver leaf on top of each piece Cashew nut barfi for decoration.

9. Store: Allow the Kaju ki barfi to cool completely and then store in an airtight container. So, Cashew barfi (Barfi kaju) recipe is ready.
