Here’s a flavorful recipe for vegetable Biryani. Biryani is a delicious and aromatic rice dish, made with basmati rice and vegetables. First, cook the rice separately with fragrant spices like saffron, cinnamon, and cardamom. Meanwhile, marinate the vegetables in a blend of yogurt and spices, then cook them until tender. Next, layer the cooked rice and vegetables together to create a rich and flavorful combination. Finally, garnish the dish with fried onions, boiled eggs, and fresh herbs. Serve the Biryani with cooling side dishes like raita or salad for a perfect, festive meal.

Ingredients

 For the Vegetable Marinade:

2 cups mixed vegetables (carrots, peas, potatoes, beans, etc.), chopped
1 cup yogurt
2-3 green chilies, slit
1 tablespoon ginger-garlic paste
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala
In added Salt according to taste
Additionally 2 tablespoons lemon juice
Fresh cilantro and mint leaves, chopped

For the Rice:

2 cups basmati rice
4 cups water
2-3 green cardamom pods
4-5 cloves
1-2 bay leaves
1 stick cinnamon
In added Salt according to taste

 For Assembly:

2 tablespoons ghee or oil
Additionally Saffron strands (optional)
Finally Fried onions (for garnish)

 Instructions

Step 1: Marinate the Vegetables
  1. First, in a bowl, mix together yogurt, green chilies, ginger-garlic paste, red chili powder, turmeric powder, garam masala, In added salt, lemon juice, cilantro, and additionally mint.
  2. Next, add the mixed vegetables to the bowl and coat them well with the marinade. Allow the vegetables to marinate for at least 30 minutes. Once marinated, then added vegetables are ready for use in the biryani.
Step 2: Cook the Rice
  1. Begin by rinsing the basmati rice under cold water until the water runs clear. Afterward, soak the rice in water for 30 minutes and then drain it.
  2. In the meantime, bring 4 cups of water to a boil in a large pot. Add the cardamom, cloves, bay leaves, cinnamon, and salt to the boiling water.
  3. Once the water is flavored with the spices, add the soaked rice and cook until it’s about 70% done. Afterward, drain the rice and set it aside for the next step.

Step 3: Cook the Vegetables
  1. First, in a large pot, heat ghee or oil over medium heat. Then, add the marinated vegetables and cook until they are tender, which should take about 10-15 minutes.
Step 4: Layer the Biryani
  1. Once the vegetables are cooked, layer the partially cooked rice on top in the same pot.
  2. Next, drizzle saffron water (if using) over the rice and sprinkle some garam masala and fried onions on top.
Step 5: Dum Cooking (Final Steaming)


1. Next,  Cover the pot tightly with a lid. Optionally, You can seal it with dough (optional) to trap the steam.
2. Cook on low heat for about 25-30 minutes to allow the flavors to meld.

 Step 6: Serve
  1. First, gently fluff the biryani with a fork before serving. Then, garnish with additional fried onions, cilantro, and mint for extra flavor.
  2. Next, serve the biryani hot with raita (yogurt sauce) and a refreshing salad on the side.
