Here’s a simple recipe for making Idli Sambar :

Idli Recipe

Ingredients:

  • 1 cup urad dal (split black gram)
  • 2 cups idli rice or parboiled rice
  • 1 teaspoon fenugreek seeds (optional)
  • Salt, to taste
  • Water, as needed

Instructions:

  1. Soak Ingredients: Soak the urad dal and fenugreek seeds in water for about 4-6 hours. Soak the rice separately for the same amount of time.
  2. Grind: Drain the water from both the urad dal and rice. In a blender, grind the urad dal to a smooth batter with some water. Transfer to a large bowl. Then, grind the rice to a slightly coarse texture. Mix both batters together.
  3. Ferment: Cover the bowl and let it ferment in a warm place for about 8-12 hours, until the batter rises and is bubbly.
  4. Prepare Idlis: Once fermented, add salt to the batter. Grease idli molds and fill them with the batter. Steam in an idli steamer for about 10-15 minutes until cooked.
  5. Serve: Remove the idlis and serve hot with sambar and coconut chutney.

Sambar Recipe

Ingredients:

  • 1 cup toor dal (pigeon peas)
  • 1-2 cups mixed vegetables (like carrots, beans, potatoes, and drumsticks)
  • 2-3 tablespoons sambar powder
  • 1 tomato, chopped
  • 1-2 green chilies, slit
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 tablespoon oil
  • Salt, to taste
  • Fresh coriander leaves, for garnish
  • Tamarind pulp (to taste)

Instructions:

  1. Cook Dal: Rinse the toor dal and cook it in a pressure cooker with enough water until soft (about 3-4 whistles). Mash it lightly.
  2. Prepare Vegetables: In a pot, add the mixed vegetables, chopped tomato, green chilies, and water. Cook until the vegetables are tender.
  3. Combine: Add the cooked dal to the vegetable mixture. Stir in sambar powder, tamarind pulp, and salt. Let it simmer for 10-15 minutes.
  4. Tempering: In a small pan, heat oil. Add mustard seeds and cumin seeds. Once they splutter, pour this tempering over the sambar.
  5. Garnish: Mix well and garnish with fresh coriander leaves.
