Ingredients:

  • 6 ripe tomatoes, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable or chicken broth
  • 1 tablespoon olive oil or butter
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and pepper, to taste
  • ½ teaspoon dried basil or oregano (optional)
  • Fresh basil leaves, for garnish (optional)
  • Cream or milk, for garnish (optional)

Instructions:

  1. Sauté Aromatics: In a pot, heat olive oil or butter over medium heat. Add chopped onions and sauté until translucent. Add minced garlic and cook for another minute.
  2. Cook Tomatoes: Add the chopped tomatoes to the pot. Cook for about 5-7 minutes until they start to soften.
  3. Add Broth: Pour in the vegetable or chicken broth. If using, add sugar, salt, pepper, and dried herbs. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes.
  4. Blend: Remove from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches.
  5. Adjust Seasoning: Taste the soup and adjust the seasoning as needed. You can add more salt, pepper, or sugar to balance the flavors.
  6. Serve: Ladle the soup into bowls. Garnish with fresh basil leaves and a drizzle of cream or milk if desired.
