Poha Recipe
Poha is a popular and healthy Indian breakfast dish made from flattened rice (poha) sautéed with spices, vegetables, and often garnished with fresh herbs. Here’s a simple recipe for Kanda Poha (a typical Maharashtrian version):
Ingredients:
- Poha (flattened rice) – 1 cup
- Oil – 1-2 tbsp
- Mustard seeds – 1/2 tsp
- Cumin seeds – 1/2 tsp (optional)
- Green chili – 1, chopped
- Curry leaves – a few
- Onion – 1 medium, finely chopped
- Potato – 1 small, peeled and diced (optional)
- Turmeric powder – 1/4 tsp
- Salt – to taste
- Sugar – 1/2 tsp (optional)
- Lemon juice – 1 tbsp
- Fresh coriander leaves – chopped, for garnish
- Peanuts – a small handful (optional, for crunch)
- Grated coconut – 1-2 tbsp (optional, for garnish)
Instructions of Poha Recipe:
- Rinse the Poha:
- Wash the poha in a sieve under running water. Gently shake the sieve to remove excess water. Let it sit for 5-10 minutes to soften.
- Prepare the Tempering:
- Heat oil in a pan or wok over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds, curry leaves, and chopped green chilies. Sauté for a few seconds.
- Add Vegetables and Spices:
- Add the chopped onions and sauté until they turn soft and translucent.
- If you’re using potatoes, add them at this point and cook until they become soft.
- Stir in turmeric powder, salt, and sugar (if using).
- Mix the Poha:
- Add the rinsed poha to the pan. Gently mix everything together, ensuring the poha is coated well with the spices and vegetables.
- Stir occasionally and cook for about 3-4 minutes, allowing the poha to heat through.
- Finishing Touches:
- Add lemon juice and give the poha a final mix.
- If using peanuts, sprinkle them on top now.
- Garnish and Serve:
- Garnish with fresh coriander leaves and grated coconut (if using).
- Serve hot with a side of chai (tea) or just as it is for a wholesome breakfast.
