Poha Recipe
A common and healthful Indian morning dish, poha is made with flattened rice (poha) that has been sautéed with vegetables and spices. Fresh herbs are frequently used as a garnish. This is a basic recipe for Kanda Poha, which is a traditional Maharashtrian dish:
Ingredients:
- 1 cup of Poha (flattened rice)
- 1-2 tablespoons of oil
- 1/2 tsp mustard seeds
- 1/2 a teaspoon of cumin seeds (optional)
- One chopped green chili
- few chopped curry leaves
- 1 medium onion, cut finely
- One small potato, peeled and chopped (optional)
- 1/4 teaspoon of powdered turmeric
- Add Salt to taste
- 1/2 teaspoon sugar (optional)
- 1 tablespoon of lemon juice
- Chopped fresh coriander leaves for garnish
- A tiny handful of peanuts (optional, for crunch)
- 1-2 tablespoons of grated coconut (optional, for garnish)
Instructions of Poha Recipe:
- Rinse the Poha:
- Using a sieve and running water, wash the poha. Shake the sieve gently to get rid of extra water. Give it five to ten minutes to soften.
- Prepare the Tempering:
- In a wok or pan, heat the oil over medium heat. Let the mustard seeds sputter after adding them.
- Add chopped green chilies, curry leaves, and cumin seeds. For a few seconds, saute.
- Add Vegetables and Spices:
- Add the chopped onions and cook until they become transparent and tender.
- At this stage, add the potatoes if using, and cook until they are soft.
- Add the sugar (if using), salt, and turmeric powder and stir.
- Mix the Poha:
- Rinse the poha and add it to the pan. Make sure the poha is thoroughly covered with the spices and veggies by gently combining everything.
- Cook, stirring occasionally, until the poha is thoroughly heated, about 3–4 minutes.
- Finishing Touches:
- Finally, combine the poha with the lemon juice.
- Sprinkle the peanuts on top now if you’re using them.
- Garnish and Serve:
- Add grated coconut (if using) and fresh coriander leaves as garnish.
- For a healthy breakfast, serve hot with chai (tea) on the side or simply the way is.
