Dal Baati Churma is a hearty and tasty traditional Rajasthani dish. It includes of three major components. First, the dal is a rich, spicy lentil curry that provides a flavorful foundation. Next, the baati, a spherical wheat flour bread, is baked to perfection and frequently served with a liberal drizzle of ghee. Finally, churma, made with crushed baati, jaggery, ghee, and cardamom, provides a sweet counterpoint to the meal.

  1. Dal: Dal is a spiced lentil meal that is typically made with yellow split peas or red lentils, onions, tomatoes, and a blend of spices such as cumin, coriander, and garam masala. As a result, it provides a tasty and hearty basis for the meal.
  2. Baati: Hard wheat buns baked until golden brown. They are also sometimes dipped in ghee (clarified butter) before serving to increase their richness and provide a delightful, delicious flavor.
  3. Churma: Churma is a sweet dish made from crushed baati combined with jaggery (or sugar), ghee, and cardamom. As a result, it provides a wonderful contrast to the savory dal and baati, harmonizing the flavors throughout the meal.

Ingredients of Dal Baati churma

 For Dal:

1 cup yellow split lentils (toor dal) or red lentils (masoor dal)
1 medium onion, finely chopped
To prepare, chop 1 medium tomato
Slit 2-3 green chilies
1 teaspoon of cumin seeds
1 teaspoon of ginger-garlic paste
1/2 teaspoon of turmeric powder
1 teaspoon of red chili powder
1 teaspoon of garam masala
2 tablespoons oil or ghee
Add Salt to taste
Fresh coriander, for garnish

For Baati:

2 cups of whole wheat flour
1/2 cup semolina (optional, for texture)
1/2 teaspoon of baking powder
1/2 teaspoon  salt
1/4 cup melted ghee (plus more for brushing).
Water, as needed

 For Churma:

1 cup crushed baati (or leftover baati)
1/2 cup jaggery or sugar (adjust for taste)
1/4 cup ghee
1/2 teaspoon of cardamom powder
Chopped nuts (optional, as garnish)

Instructions

For Dal:

  1. First, rinse the lentils and cook in a pressure cooker with 3 cups of water for 3-4 whistles, or until soft.
  2. Meanwhile, in a separate pan, heat the oil or ghee. Then, add cumin seeds and let them sputter. After that, add the chopped onions and cook until they are golden brown.
  3. Next, mix in the ginger-garlic paste, green chilies, turmeric powder, and red chili powder. Cook for about a minute, then add the chopped tomatoes and salt. Allow the tomatoes to simmer until softened.
  4. After that, combine the cooked lentils with the tempering and stir thoroughly. If necessary, adjust the consistency with water. Finally, add garam masala and boil for 5-10 minutes. Sprinkle with fresh coriander before
For Baati:

Here’s the recipe of Baati :

  1. First, in a mixing bowl, add whole wheat flour, semolina, baking powder, and salt. Add the melted ghee and stir until the mixture is crumbly. Then gradually add water to make a soft dough.
  2. Next, divide the dough into little balls (about the size of a golf ball) and flatten if desired.
  3. Next, preheat the oven to 200°C (400°F). Place the baatis on a baking tray and bake for 20-25 minutes, flipping halfway through, or until golden brown. You may also cook them in a tandoor or over an open flame for a more traditional touch.
  4. Finally, when the baatis are fully cooked, generously brush them with ghee to enhance flavour and richness.
For Churma:
  1. Make the Churma: First, in a bowl, combine the crushed baati, jaggery (or sugar), ghee, and cardamom powder. Mix well until the jaggery has melted and been entirely integrated, ensuring that all of the ingredients are smooth.
  2. Garnish with chopped nuts, if preferred, to improve the texture and flavor. This will give the meal a satisfying crunch and an extra layer of richness.
Serving:

Serve the hot dal with baati and churma on the side. Additionally, drizzle extra ghee over the baatis for added richness and flavor. Finally, enjoy your Rajasthani feast!
